How Do I Make Rice Pudding?

Here is how you make Rice Pudding:

Bring 2 1/2 cups of the milk and the sugar to a boil slowly over medium heat in a large saucepan. Meanwhile, whisk eggs in a large glass bowl (you will be adding hot milk to eggs, so don't use plastic). Also, in a cup, mix remaining 1/2 cup milk with cornstarch, until smooth.When milk starts to bubble, gently stir cornstarch-milk mixture, then add to boiling milk and stir. Bring back to a boil and let simmer for exactly 1 minute, no more (cornstarch breaks down after a minute, so it will lose its thickening power if heated for too long). Remove from heat. With bowl of eggs close to you, and a whisk in your dominant hand, pour hot milk in a thin stream (about the diameter of a pencil) into eggs while whisking madly, until about 1/3 of the milk mixture is incorporated into the eggs. Reverse procedure, so you're pouring the eggs in a thin stream into the pan of milk, while whisking all the time. This only takes about 2 minutes. When eggs are all incorporated into milk, whisk for a moment, then add a pinch of salt, and flavorings such as vanilla, nutmeg, cinnamon, etc. Add rice, breaking up large, sticky chunks with your fingers.If you want more substance, just add more rice, but adjust your dietary tracking to reflect the change.Number of Servings: 6Recipe submitted by SparkPeople user HOPEISPOWER.
