- 6 sheets rice paper
- 1 medium carrot, sliced lengthways (I used a peeler)
- 1 small-ish bunch raw pak choy, chopped roughly into strips
- 6 thin strips tofu, pan fried
- 2 tsp soy sauce (to coat tofu in pan)
- 3 eggs, fried like an omelette

Here is how you make Tofu Rice Paper Rolls:

Slice all veggies the same way. In this case I sliced everything lengthways. Next, whisk your eggs together and put them into a heated frying pan with about a teaspoon or so of oil- fry it like you would an omelette.Next, you need to wet the rice paper (wet it as you use it!) so it becomes pliable, but don't let it stick to itself or you'll be trying to unstick it for ages!
