1 small beet, chopped
3 radishes, chopped
1/2 red bell pepper
1/2 cup chopped broccoli
1/2 cup mushrooms, sliced
1/2 leek, white part only
2 pods okra
6 cups mixed greens
1 cup brown rice, cooked
1 lemon wedge, or to taste
1 T white cooking wine
dried parsley
dried summer savory
cracked pepper

Here is how you make Vegetable Fried Rice a la Flea:

Pre-chop all the vegetables ahead of time.Heat the olive oil to no higher than a medium setting. Add the carrot, beet, and radishes and let them sautee on low heat until they soften. Add the summer savory, parsley, and pepper along with the above. Stir in the mushrooms and broccoli and do likewise. Once they reach the desired consistency, add the leeks and bell pepper. Add the okra at the last minute and monitor closely so it doesn't have a chance to get too slimy. Add the rice and stir it all together, and finally the greens. Allow the greens to cook down - they'll shrink a lot.Right before serving, squeeze in the juice of one quarter lemon, or to taste. Add the white cooking wine, and some extra vegetable broth for flavor if desired.If it's a hot day, enjoy it with an ice-cold beer.
