Preheat oven to 425 and make sure the rack's at the midpoint.2. Break the cauliflower into large florets (don't forget to wash)3. Cut roots and ends off scallions (1 bunch) and large chop them (about the same _weight_ for each cut, so white parts are a lot smaller). This helps them roast evenly.4. In a mixing bowl, add 1/2 the oil, thyme (chopped or powdered), 1/2 the garlic powder, and salt. Mix well. Put into oven-safe dish. Put in oven.5. Stir every ten minutes. Do this FOUR times. Meantime...6. Trim asparagus (one bunch, usually a pound) and cut into weight-equivalent chunks (see #3 above). Add rest of spices and oil.7. Add in the asparagus, then sprinkle on the romano/parmesan cheese and stir together. (Keep out for vegan version.)8. Put in for another 12-15 minutes.9. Let cool a couple minutes. Veggies should still be crunchy.
