2 lbs sunchokes
1 clove garlic

1 cup shiitake mushrooms

Here is how you make Roasted Sunchoke and Kale Farro:

Preheat oven to 425.Wash sunchokes well and slice into small cubes. Mince garlic and shallots. Cut bell pepper into thin strips. Toss all in olive oil and sprinkle with a little salt. Roast on a baking pan for 15-20 minutes or until sunchokes are tender (like a potato) and golden brown. Mean while, cover farro with 2 inches of water and bring to a boil. Reduce heat and cook, covered, for 25 minutes. In a skillet, saute shiitake until tender.
