How Do I Make Roasted Carrots, Onions, and Fennel?

Here is how you make Roasted Carrots, Onions, and Fennel:

Preheat oven or grill to 400-425. Wash & cut carrots (do not peel) into 3 inch chunks. Place all the vegetables into a 9x13 baking dish. Melt butter into olive oil in small pan until just dissolved and incorporated, then pour over vegetables and stir to coat. Sprinkle salt & pepper over and stir to distribute. Roast in oven or on grill, stirring once or twice, 45-60 minutes depending on your preference.
