1-1/2 pound small yukon gold potatoes or small red potatoes,cut into wedges
1/2 t salt
1/4 cup chopped shallots
1/4 cup chopped fresh chives
1/4 cup chopped fresh basil
1 tablespoon chopped fresh thyme
1/2 cup chopped fresh parsley
1/4 cup seasoned rice wine vinegar

Here is how you make Roasted Yukon Gold Potatoes with Peppers:

Preheat oven to 425?F. Pour 2 Tablespoons extra-virgin olive oil into large ziplock bag. Add peppers and onions and and massage until well coated with oil. Spread all peppers and sliced onion onto cookie sheet. Season with fresh cracked pepper. Roast 10 minutes while cutting potatoes into wedges. Place potatoes in bag, add remaining 1 tablespoon oil, shallots, salt, and 1/2 the herbs. Mix well until evenly coated. Arrange potatoes in single layer atop peppers. Roast until potatoes are tender and beginning to turn golden, about 40-50 minutes. Remove from oven and sprinkle remaining herbs on top and drizzle vinegar over while still hot. Gently fold.
