Baby Carrots, raw, 1 cup
Mushrooms, fresh, 6 small

How Do I Make Basic Veggies Roasted in Olive Oil?

Here is how you make Basic Veggies Roasted in Olive Oil:

Place 2 TBsp. of olive in the bottom of a large baking pan. Add all the veggies. Drizzle 1 TBsp olive oil on top. Salt and pepper. Shake around and get veggies evenly distributed. Bake at 450 degrees fro 40 minutes. Turn heat off oven and let sit in the cooling oven for about 5 minutes, or until you serve it. (The times are highly variable dependeing on the oven, pan size, etc.) These are good served with couscous or with a nice dollop of hummus. As a main dish this is 3 servings, but as a side dish it easily 5-6.** Note, this calls for half an eggplant- I usually make two pans of this at once and use the whole eggplant and onion but this is the amount in each pan for calorie calculating.
