1 tsp salt
1 orange bell pepper, chopped
1/2 c chopped green onion
1/2 c chopped fresh cilantro
5 oz grape tomatoes, quartered
1 c vegetable stock or water (I use veggie stock)
1/2 c quinoa

Here is how you make Lime Cilantro Black Bean and Quinoa Salad:

In saucepan, combine 1 c veggie stock (or water) and 1/2 c quinoa and cook according to quinoa package directions. Cool.In mixing bowl, combine olive oil, lime juice, lime zest, and salt. Whisk together until emulsified. Add drained black beans, drained corn, cilantro, orange bell pepper, chopped green onion, and cooled quinoa. Use spatula to gently toss ingredients in the dressing. Best if left to marinate for hours and served at room temperature.
