1-1/2 c. black beans (canned or cooked)
1 red onion, finely diced
1 clove garlic, minced
1/2 tsp. ginger, minced
1 handful fresh mint leaves, chopped (or chiffonaded if you're feeling fancy)
2 T. fresh lemon juice
1/4 - 1/2 tsp. salt (to taste...it really depends on how salty your beans are, so start on the low end and add as needed)

Here is how you make Pineapple Black Bean Salad:

Rub a heavy skillet with a tiny bit of olive oil and heat over medium heat till hot (don't let oil smoke, though). Pat pineapple chunks dry and add to skillet. Spread into an even layer and cook undisturbed for 3 minutes. Flip and cook another 2 minutes to caramelize the other side, then remove from heat and add to salad bowl. Combine remaining ingredients with grilled pineapple and toss gently. Season with salt to taste. Serve slightly warm, or chilled.
