I use a whole cauliflour , cored and broken into small sections. Put half at a time in food processor and pulse to the size of rice. Put in large bowl. Use 2 carrots, I shred and add to cauliflour. When I am serving it I add 1/4 cup black beans, 1 tbsp of craisins and 2 tsp of sunflower seeds to each individual bowl.
