1 red capsicum, deseeded, roasted, peeled and cut into strips
200g soft goat's cheese
4 slices bread
A little olive oil
Freshly ground black pepper
Approx 2 tbsp dressing (below)
2-3 handfuls mixed green salad leaves, washed and drained

Combine 2 tbsp olive oil with 2 tsp lemon juice (or white or red wine vinegar) and some freshly ground black pepper to taste. Add 1 tsp Dijon or wholegrain mustard, 1 minced garlic clove and 1 tbsp fresh chopped chives.

Here is how you make Goat's cheese salad:

Cut cheese into four thin slices and use a pastry cutter to cut the bread into circles roughly the same diameter as the cheese. Toast the bread on both sides, then put a piece of cheese on top of each slice. Drizzle a little olive oil and some black pepper to taste onto the cheese and grill for about 2 minutes. Put the dressing, salad leaves and capsicum into a bowl and toss to combine. Put salad on a wide flat plate and arrange the slices of goat-cheesy bread on top. Serve while cheese is still warm.
