2 beets
1 head romaine lettuce, chopped finely
1/2 c. grape tomatoes, halved
3 green onions, sliced into 1/2" pieces
1 can cannellini beans, drained and rinsed
1.5 oz. blue cheese, crumbled
1 T. olive oil
1 t. dijon mustard
2 T. balsamic vinegar
1/8 t. salt, or to taste
black pepper to taste


How Do I Make Manhattan Chopped Salad?

Here is how you make Manhattan Chopped Salad:

Preheat oven to 375. Wash beets and cut off greens. Place beets on a large sheet of tinfoil and spray or drizzle with oil if desired. Close beets into tinfoil packet and place on baking sheet. Bake, 1 hour, or until beets are soft when pierced. Open packet and allow beets to cool. Peel off skin (should be fairly easy) and cut into a small dice.Combine next 4 ingredients (lettuce through beans) in a large bowl. Whisk together oil, mustard, vinegar, salt & pepper.
