1 cup coarsely grated carrots
1 cup chopped flat-leaf parsley (not curly parsley which doesn't taste like anything, and for love of all that's holy, don't mix up the cilantro and the parsley!)
6 oz container crumbled Feta Cheese
3/4 cup Greek Vinaigrette Dressing, homemade or bottled (Newman's Own Greek Dressing used for nutritional calculation)

OPTIONAL INGREDIENTS (not included in nutritional calculation):
1/2-3/4 cup oil-cured black olives, pitted and chopped
1/2 cup peperoncini (pickled peppers), chopped
1 15-oz. can reduced-sodium chickpeas/garbanzos, drained and rinsed well
leftover grilled veggies, chopped - zucchini, asparagus, peppers, eggplant, whatever you've got as long as the seasonings are compatible
2 cups cooked shrimp (51-60 size or chopped larger), or chopped cooked chicken (not vegetarian, obviously!)
