Cook 1 1/2 cups of Farro in 4 cups of water with 2 tsps of Kosher Salt.Keep on medium to low for 10-20 minutes until tender.Rinse thoroughly once cooked.Chop tomatoes up small along with sweet onions and parsley.Add all to a bowl.Whisk together the olive oil, lemon juice salt and pepper.Serve room temperature.Makes about 8 1 cup servings
