3/4 cup chopped red bell pepper
1/3 cup pitted, chopped Kalamata olives (approx 10 olives)
1/4 cup chopped, toasted walnuts
1/4 cup crumbled feta, at room temperature
4 Tbsp torn fresh sweet basil leaves
4 Tbsp chopped Italian parsley

For Dressing:
1 Tbsp olive tapenade
2 Tbsp non-fat plain yogurt
1 Tbsp extra virgin olive oil
2 Tbsp red wine vinegar
salt & freshly ground pepper, to taste

4 cups of chilled, crisp, torn romaine lettuce

Set aside for 20 minutes while you prepare the remaining ingredients.Drain the onions and pat dry with a towel. Combine all salad ingredients (onions through parsley) in a medium size bowl. Combine dressing ingredients in a jar and shake well. Drizzle salad ingredients lightly with dressing, reserving 2 Tbsp, and toss to combine. Taste for salt and add, if necessary, along with pepper. Lightly toss torn lettuce with remaining dressing. Place the dressed lettuce on a platter and top with the salad. Garnish with additional basil and/or parsley, if desired.
