Bring to boil. Once boiling, reduce heat to simmer and cover. Let simmer ten minutes, or until quinoa is well-cooked. Pre-heat oven to 375 degrees. Chop up asparagus (you can also slice asparagus) and lightly drizzle in 1 tbsp. of olive oil. Add salt and pepper to taste. Place on cookie sheet. Bake for 10 minutes, or until asparagus is tender. While the quinoa and asparagus are cooking, prepare the salad. Slice tomato. Chop up onions (if neccessary, saute onions. If you prefer raw onions, leave raw). Take your 1/2 an avocado and dice it.
