* Tomato (1/2, sliced)
* Onion (1/2, diced)

* Quinoa (1 cup dry)
* Vegetable Broth (2 cups)
* Olive Oil (2 tbsp.)
* Lemon (1/2, to be squeezed)
* arugula (4 cups)
* Goat Cheese (1/4 cup, OPTIONAL)


How Do I Make Avocado, Asparagus and Quinoa Salad?

Here is how you make Avocado, Asparagus and Quinoa Salad:

Mix 1 cup (dry) Quinoa in 2 cups Vegetable Broth in sauce pan. Bring to boil. Once boiling, reduce heat to simmer and cover. Let simmer ten minutes, or until quinoa is well-cooked. Pre-heat oven to 375 degrees. Chop up asparagus (you can also slice asparagus) and lightly drizzle in 1 tbsp. of olive oil. Add salt and pepper to taste. Place on cookie sheet. Bake for 10 minutes, or until asparagus is tender. While the quinoa and asparagus are cooking, prepare the salad. Slice tomato. Chop up onions (if neccessary, saute onions. If you prefer raw onions, leave raw). Take your 1/2 an avocado and dice it. Place the 4 cups of arugula in a large bowl. Add Tomatos, onions and asparagus. Then squeeze the 1/2 a lemon over the bowl. Add the one tbsp. of olive oil. Mix generously. When done, add the bits of asparagus. Finally, add the cooked quinoa. Mix generously. Place whole salad in the refrigerator for half an hour.
