Preheat oven to 375*F.Cut top off of bell pepper and remove seeds and ribs, leaving remaining pepper intact. Top pepper with remaining 1 tablespoon of cheese and 1 teaspoon of roasted almond slices and bake, uncovered, for 10 more minutes or until cheese is melted and the nuts are golden.Serve each pepper half on a bed of fresh baby spinach with 1/2 onion slice each dispersed around the pepper.Serving Size:?makes 6 1/2-peppers plus greens, 1 per person.
