Makes 8 side dish servings or 4 meal-sized servings.Cook 1 cup of quinoa in 2 cups of boiling water, cook for 12 minutes covered on simmer or until the water is absorbed.Shred vegetables (minus garlic and basil) while quinoa is cooking, and put into sieve to drain excess liquid.
