1 cup water
1/2 cup red quinoa
1 bay leaf
8 tsp pine nuts
1/2 cup tart apple with skin on, small dice
1/2 cup red, orange or yellow bell pepper, small dice
1/4 cup red onion, small dice
2 cups fresh chopped parsley (or as much as you want)
8 tsp extra virgin olive oil
salt and pepper to taste

Here is how you make Red Quinoa Salad:

Combine water, quinoa and bay leaf in pot and bring to boil. Reduce heat slightly, cover and cook 15 minutes (until liquid is absorbed). Remove from heat and cool, leaving cover on.In medium size bowl combine pine nuts, apple, bell pepper, red onion and parsley. Add the cooled quinoa and stir.Just before serving, whisk the oil and vinegar together and add to the quinoa salad.
