1 Large Onion (White or Red)
2 Garlic Cloves (Minced)
1 Cup Vegetable Broth
1/2 cup of White or Brown Rice (We use brown)
1/2 cup walnuts (Chopped *finely)
1/2 tsp. Tarragon
1/2 tsp. Sage
*Salt to taste
*Pepper to Taste
1 tbsp. Butter
1 tbsp. Olive Oil (we use extra virgin)
1 Egg
1 cup of flour


How Do I Make Tofu Salad over Rice?

Here is how you make Tofu Salad over Rice:

Roast walnuts and cook rice at the same time Roasting Temp is generally 350 degrees for 15 minutes (watch closely walnuts burn quickly).Melt butter and add onions in skillet, then add garlic.. After you add the garlic slowly add tarragon and sage. After you add the seasonings (pepper and salt go in at this time too) add the Vegetable broth slowly and stir frequently.Cook for ten minutes.Drain and dry tofu cut into 1/2 strips (finger width) dredge in egg and flour and slowly brown in the 1 tbsp of oil. When everything is finished add the Tofu to the Onion mix, walnuts and put over rice. Put the Blue cheese on top and enjoy. It is good. I hope you enjoy.
