Cooking spray
1 CUP Quinoa
2 CUPS Vegetable Stock
1 1/2 CUPS Canned Corn kernels, drained
2 TSP. Vegetable oil (I use olive oil)
2 CUPS Onion, diced
1/2 CUP Red sweet bell pepers, diced
2 TSP. Garlic, fresh crushed
1/2 TSP. Cumin, ground
1 TSP. Jalapeno pepper, seeded & minced (I used 3 drops of Tabasco sauce as I could not find the pepper at the market)
4 CUPS Spinach, fresh chopped
1 TBSP. Water
1/3 CUP Green Onion, chopped (Spring Onion is another name)
1/3 CUP Cilantro, fresh chopped (dried can be used but I didn't care for the outcome)
1/3 CUP Feta cheese, light crumbled
2 TBSP. Olive oil
2 TBSP. Lemon juice


How Do I Make Salad - Quinoa/Corn/Bell Pepper/Spinach?

Here is how you make Salad - Quinoa/Corn/Bell Pepper/Spinach:

1. Bring Quinoa and stock to boil. Cover and simmer 15 mins. just until stock is absorbed and quinoa is tender. Remove from heat and place in serving bowl.2. Spray non-stick skillet with cooking oil and place over medium heat. Saute corn approximately 8 mins. just until browned, stirring. Set aside. (I put into another bowl)3. Spray skillet with cooking oil and vegetable oil; place over medium heat. Add diced onion, bell pepper, garlic, cumin and jalapeno pepper; saute until onion begins to brown, about 5 mins. Add spinach and water. Cook until spinach wilts, 2 mins.4. Remove from heat. Stir in green onion, cilantro, cheese, olive oil, lemon juice and sauted corn.
