3-4 tbsp lemon juice

Cover the asparagus & tomatoes in 1 tbsp olive oil and roast at 425 for 10-12min. Chop apsparagus into bite-sized pieces.Saute onion & squash in .5 tbsp olive oil for 10min until soft. Cook quinoa in stock as directed on box (approx 15-20min)Combine all ingredients in a large bowl.Whisk together lemon juice, honey and olive oil & pour over mixture.
