Here is how you make French Toast Sandwich:

The day before making this French toast, place the yogurt in a cheesecloth-lined colander suspended over a bowl to catch the whey as it drains out. If the strawberries are frozen, put them in the refrigerator to thaw.In the morning, gently mix the vanilla and sweetener with the "yogurt cheese" remaining in the colander and refrigerate while preparing the toast.Put the strawberries in a blender or food processor and pulse for just a few seconds, until roughly chopped. (Or chop them by hand.) Put them in a small saucepan with a lid, and turn the heat to low/medium. Stir occasionally while you prepare the French toast. You may want to add a bit of cornstarch to thicken the sauce.Put the egg substitute, egg, milk, cinnamon, and nutmeg in a blender and blend 10 seconds, or until frothy. Pour into a flat-bottomed bowl. Heat a large skillet to medium/high heat. Soak each piece of bread on each side for 10-15 seconds. Briefly spray the pan with cooking spray, and add the toast.
