1 lb bok choy, washed and cut into 1/2 inch slices
1/2 c. arugula, washed and stems trimmed
1 Tbsp low sodium tamari sauce

Here is how you make Bok Choy and Arugula w/ Soy Sauce:

1. In a large nonstick skillet, combine the canola oil and sesame oil and heat over medium-high heat. Add the onion and saute for 2 minutes. Add the garlic and saute for 30 seconds. Reduce the heat to medium, add the white stems of the bok choy, and saute for 3 minutes. Add the green leaves of the bok choy and the arugula and saute for 5 minutes. If the skillet seems dry, add 2 Tbsp of water. 2. Add the soy sauce and saute for 3 more minutes. Adjust the seasoning and serve.
