Here is how you make Spaghetti with Spinach in a White Wine Garlic Sauce:

Cook pasta according to package directions until al dente, drain and set aside.Heat 1 Tbsp oil over med-high heat and cook mushrooms until golden and lightly caramelized, add 2 tbsp vegetable stock and cook until absorbed. Remove mushrooms from heat and transfer to small bowl. Add another 1 Tbsp of oil to pan and saute onion over medium heat until golden brown, 8 to 10 min. Add garlic and cook for 2 min, stirring constantly. Remove onion and garlic from heat to small bowl. Add the remaining 1 Tbsp oil to pan, add spinach over medium high heat until wilted, about 2 min. Add 2 Tbsp of stock, cook until absorbed. Season with salt and pepper to taste. Return the mushrooms, onions and garlic and the tomatoes to the pan and cook over medium-high heat. Add the white wine and cook until reduced by two-thirds, stirring occasionally. Stir in the remaining stock and cook for 5 minutes until sauce begins to reduce and thicken. Add Parmesan cheese and stir. Top pasta with sauce and toss to coat. Serving Size:?6 servings
