I found this recipe online and modified it for my own needs. The ingredients work best when you make two batches at once, as Gimme Lean comes in 14 oz tubes, and eggs come in 6, 12 or 18 size containers. The original recipe calls for 1 teaspoon of black pepper and I love pepper so that works for me, but you might want to cut back a bit if you aren't as much of a fan as I am.These will last in the fridge for three days, and in the freezer for a month, which helps a lot when making two batches at once.

8 oz. mushrooms, sliced
1/4 c diced onions
1/3 c shredded Swiss cheese
1 tsp black pepper
5 eggs
4 egg whites
1 c 1% milk

Here is how you make Mini Mushroom and "Sausage" Quiches:

Makes 1 dozen mini quiches.1. Preheat oven to 325 degrees Fahrenheit. Coat a nonstick muffin tin with cooking spray.2. Heat a large nonstick skillet over medium-high heat. Add sausage and cook until golden brown, crumbling into small pieces as you cook. Transfer to a bowl to cool. Add oil to the pan. Add onions, cook until slightly transparent, then add mushrooms. Cook, stirring often, until golden brown. Transfer mushroom/onion mixture to the bowl with the sausage and allow to cool.Stir in cheese and half the pepper. (You can add all of the pepper at this point, but I find it works best to add some to the egg mixture so that the pepper is evenly distributed throughout the quiche.)3. Whisk the eggs, egg whites, milk and the rest of the pepper in a medium bowl. Divide the egg mixture evenly among the 12 muffin cups. (I find that a ladle works nicely for this step!) Sprinkle a heaping tablespoon of the sausage mixture into each cup until evenly distributed.4. Bake until the tops are just beginning to brown, about 30-40 minutes. Place a rack on top of the muffin tin(s), flip over and turn the quiches out onto the rack.
