Here is how you make Healthy Skillet Scramble:

Bake the potato. This can be done ahead of time (not included in the prep time), or I cooked mine in the microwave for 3.5 minutes.Chop broccoli and mushrooms into pieces - I prefer smaller pieces, but whatever size you like is fine.Melt the tsp butter in a skillet over medium heat. Chop the baked potato into cubes, about 1/3" (again, the size you prefer is fine). When butter is sizzling and starting to brown, put potato pieces into skillet and cook for about sixty seconds, stirring frequently.Add mushrooms and broccoli, and a tbsp of water. Stir frequently and cook for about five minutes, or until broccoli is slightly tender. Add another tbsp of water if the pan dries out. Add egg whites, salt, pepper, and thyme.
