Southwest Scramble

This is an excellent breakfast that I have been making for a couple of years now. It tastes great and is a high source of protein and fiber, as well as low in fat.Using only the whites of eggs cuts down the cholesterol content considerably. The sour cream is a low-cal way to make the eggs fluffier and complements the Southwest taste.

Here is how you make Southwest Scramble:

1) Place black beans in a microwave safe bowl and warm-up.(I usually rinse the beans off first (if coming from a can) to get the liquid off that they are canned in, so the eggs don't turn completely brown.)2) Combine the egg whites and sour cream and whisk together.3) Cook the egg mixture and beans together in a non-stick pan until cooked through.4) You can either serve with the salsa on the side, or it can be cooked in with the mixture.- Optional - It is also good with a bit of shredded cheese sprinkled on the top.
