Here is how you make Sicilian Koshary:

Over medium heat in a large frying pan heat the olive oil. Add garlic, cook for 1-2 minutes (until blond).Add herbs (or spices), a pinch of salt, and chickpeas.Cook until chickpeas are tender. Add vinegar and cook to reduce.Add canned tomatoes, reduce heat and simmer for 20 minutes or so. In last minute or two add the butter and stir it in until it is melted. Salt to taste.Cook pasta according to directions (use the pasta of your choice, I like the yolkless egg noodles).Drain pasta and add to tomato mixture, combine.Serve topped with french fried onions.
