I am not a fan of cooked bell peppers as they seem to overpower the other flavors in dishes for me. So this may not be a traditional "ratatouille" but its a great way to get rid of the abundance of random veggies (eggplant, squash & tomatoes) that decided to grow all of a sudden in the garden :) Even the neighbor kids loved it!
