--To pre-cook the quinoa: IMPORTANT--the dry quinoa MUST be rinsed thoroughly prior to cooking to avoid a bad taste. In a small sauce pan, bring 2/3 cup water to a boil. Add the quinoa, stir, and reduce heat. Simmer for 15 minutes, stirring occasionally, until all the water is absorbed.--In a large pot, heat the olive oil. Add the chopped onion and cook, stirring often, until the onion starts to brown.--Add the rest of the ingredients and bring to a boil.
