- 6 cups vegetable broth
- 4 cups water
- 1 yellow onion, finely chopped
- 2 stalks celery, chipped
- 1 carrot, diced
- 4 cloves garlic, minced
- 1 bay leaf
- 3 tablespoons tomato paste
- 11⁄2 teaspoons salt
- 1⁄2 teaspoon freshly ground black pepper
- 1⁄4 cup chopped Italian parsley
- 1⁄4 cup finely chopped Italian parsley for garnish
