1 cup Swiss Chard (cut into bite sized pieces, approx. 1 medium bunch)
3-4 cups vegetable broth (I used closer to 4 cups of low sodium veggie broth)
1 can Lima Beans
1 sprig Fresh Rosemary
1 bayleaf
1/2 cup dry Israeli Couscous
1 tsp. Sriracha (hot chili sauce--optional)
salt and pepper to taste

Here is how you make Lima Bean, Carrot, and Swiss Chard Soup (vegetarian):

Heat a large skillet or pan and add olive oil. Add onion and cook for 2-3 min. Add carrots and cook 2-3 min. Add swiss chard, lima beans, broth, rosemary, and bayleaf. (I used a whole sprig of rosemary and then fished it out later with the bayleaf).Bring to a simmer for 5 minutes.Add couscous and (optional) sriracha. Cook for an additional few minutes (use cook time for your couscous... around 8 minutes). Remove rosemary and bayleaf before serving.
