Chop leeks and garlic, sautee in a pan that has been coated with the olive oil till browned and fragrant stirring occasionally, about 5 minutes. Deglaze pan with sherry stirring until the sherry has reduced by half. Add Kale, spinach, broth, and thyme to the pot, cover and simmer for 15 minutes.Transfer soup to a blender and blend to desired consistency.
