Here is how you make Cauliflower Ginger Soup:

Heat olive oil in dutch oven over medium heat. Add onion, carrots, ginger, and garlic. Cook till carrots are soft, about 7 minutes. Add 1 c. stock and cauliflower. Cover and let cook 5 minutes. Add remaining stock and cook till cauliflower is soft, about 10 minutes. Puree soup with immersion blender and stir in cheese if using.
