Trim and quarter baby artichokes. Boil in seasoned water with 1 C diced potato.When tender, place artichokes and potato in blender and blend until smooth. (add enough liquid to make a smooth creamy base for the soup). If you want a chunkier soup reserve some artichoke and dice.Heat a nonstick pan and add minced garlic and diced shallot. Add 4 cups water, salt, pepper, thyme, carrots, reserved potatos and simmer until carrots and potatos are tender.
