11/4 t Kosher salt
1/2 t Fresh groud pepper
1/2 t Dried basil


How Do I Make Simply Gourmet Asapragus Soup?

Here is how you make Simply Gourmet Asapragus Soup:

Add shredded potatoes and sliced asparagus (still reserving tips) to leeks with water to cover - about 5 cups. Bring to a boil; reduce heat to medium-low and simmer until all vegetables are tender, about 12 to 15 minutes. Stir in reserve asparagus tips and cook for 3 to 4 minutes. Season with salt and pepper.Stir in half & half. Cook over low heat until soup is hot - do not boil. Serve hot. Place butter in 4 quart saut? pan over medium low heat. Add shallots and crushed garlic and saute over low heat for 3 to 4 minutes to soften.While shallots are cooking, cut asparagus in to ?-inch pieces. Set aside the tips for garnish. When shallots are soft, add asparagus and the potato to the sauce pan and cook for about 6 minutes or until the asparagus is bright in color. Add the chicken stock. Bring pot to a boil then reduce heat to low and simmer for about 20 minutes or unt0 lthe veggies are soft. Insert the Cuisinart Smart Stick or immersion blender into the saucepan and blend the soup using a gentle up and down motion until the ingredients are well combined. (This can also be done in an upright blender is you don?t own an imersion blender). Add salt and pepper and basil.While soup is cooking bring 2 cups of water to a boil. Add the asparagus tips and cook until just tender and bright green. Drain and immediately plunge into an ice water bath to stop cooking. Drain and let dry completely.Serve soup hot, garnished with the reserved asparagus tipsI also like to eat this soup with a dollop of low fat cottage cheese and then the asparaguse tips for added protein.
