Next add the coriander, cumin and chillies (if using) cook for a further 2 minutes.Add the tomatoes and stock and bring to a boil. Simmer gently for about 30min until the vegetables are cooked through.Next add the chickpeas and stir well. Season with salt and pepper to taste. Cook gently for a further 10 minutes.The soup is good with rustic wholemeal bread. Makes about 5 servings, appx 1.5 cups each.
