1. In large pot, coat with non-stick spray or lightly with oil, heat over medium high. When hot add onions and celery. Cook until softened. Add lentils, and broth. Bring to a boil and simmer for about 20 minutes. Stir frequently! Lentils like to stick to the bottom of the pot. Add more water, if they suck up too much broth.2. Add tomatoes, and herbs. Return to a boil. Add noodles, simmer for about 20 minutes more or until noodles are al dente. 3. Serve immediately. Top with fresh basil, cheese, and croutons.
