Here is how you make Blonde Lentil Soup:

Make a broth by combining the celery cut in large pieces, one of the onions ( peeled and quartered, and carrots (sliced thick). Add 1 tsp salt. Cook until vegetables are soft and tender. Discard the celery and onion. Puree the broth with the carrots and return to pot.Chop the other onion fine. Saute the onion, shallots, and garlic in butter. When the onions begin to turn brown, add them to the broth along with the lemon peel, bay leaf, and lentils. Let it cook for 40 minutes, adding water to maintain the same consistency. Now add the freshly squeezed lemon juice, a little crushed sweet basil, and season wtih salt and pepper to taste.
