What Are The Ingredients For Coconut Red Lentil Soup Recipe?The ingredients for Coconut Red Lentil Soup are: 1 cup dried red lentils1 cup split green peas (or yellow) 1 med carrot, about 75 grams 2 tbsp grated ginger root 2 tbsp curry powder 1 tbsp chili powder (optional) 2 tbsp ghee (or butter if you don't have ghee) 8 scallions (green onions), sliced thin 1/3 cup golden raisins 1/3 cup tomato paste 1 can (13.5oz) lite coconut milk 2 tsp sea salt small handful of chopped cilantro (optional) 7 cups water How Do I Make Coconut Red Lentil Soup?Here is how you make Coconut Red Lentil Soup: Rinse the peas and lentils. Place them in large soup pot, cover with the water, and bring to a boil. Reduce heat to a simmer and add the carrot and 1/4 of the ginger. Cover and simmer for about 30 minutes, or until the split peas are soft.While they're boiling, toast the curry and chili powders in a small dry skillet over low heat, just until they are fragrant. Be careful not to burn them. Set aside. Place the ghee in a pan over medium heat, add the green onions, the remaining ginger, and raisins. Saute for two minutes stirring constantly, then add the tomato paste and saute for another minute or two.Add the toasted powders to the tomato mixture, then add this to the simmering soup. Add the coconut milk and salt. Simmer, uncovered, for 20 minutes or so. The soup should thicken, but you can add more water for a thinner soup, or simmer longer for a thicker one, whichever you prefer.
