Sautee onion, garlic, celery and carrots in a frying pan. Add all other ingredients to a crock pot set to low. Once onions are translucent, add them to the crockpot too. If needed, add additional water so there is 1 inch of liquid above the lentils and veggies. Cover and cook on low for 4-6 hours or until vegetables and lentils are soft. ***This can also be cooked on the stove (preferable in a covered dutch oven pot) for a faster cook time.
