2 Tbsp olive oil
1 Tbsp butter
2 leeks, thinly sliced
2 shallots, chopped
1 garlic clove, chopped
8 ounces fresh wild mushrooms (or whatever you can get locally)
5 cups vegetable stock
1/2 tsp dried thyme
2/3 cup milk
salt and pepper


How Do I Make Sue's Wild Mushroom Soup?

Here is how you make Sue's Wild Mushroom Soup:

Put dried porcini in a bowl, add 1 cup warm water and let soak for 20-30 minutes. Lift out of liquid and squeeze to remove as much liquid as possible. Save the liquid to use later. Finely chop the porcini.Heat the oil and butter in a soup pot. Add the leeks, shallots, and garlic. Cook for about 5 minutes, stirring frequently, until softened.Chop or slice the fresh mushrooms and add to the soup pot. Stir over medium heat for a few minutes, until they begin to soften. Pour in the stock and bring to a boil. Add the porcini, soaking liquid, dried thyme, salt, and pepper. Lower the heat and simmer gently for 30 minutes.Pour 3/4 of the soup into a blender or food processor and process until smooth. Return the processed soup to the soup pot, stir in the milk, and heat thoroughly. Season with salt and pepper, if necessary.Yum!
