1 Large Onion - peeled & chopped 1" pieces
2 Large Carrots - peeled and chopped 1" pieces
2 Celery Stalks - chopped 1" pieces
8 Cloves Garlic - peeled and smashed
8 Sprigs Parsley
1/2 Cup Lentils, rinsed

THAI NOODLE SOUP -
1 Medium Onion - peeled & thinly sliced
1 Medium Carrot - peeled & julienned
2 Cups Sugar Snap Peas - rinsed
6 Ounces Shittake Mushrooms - stems removed
3 Cloves Garlic - peeled and minced
1 Tbsp. Ginger - grated
2 Cups Bok Choy - sliced
Vegetable stock (see above)
2 Tbsp. Low Sodium Soy Sauce
Zest & Juice of 1 Lime
1 Serrano Chile - sliced into thin rounds
6 Ounces Rice noodles - cooked per package
1 Cup Mung Bean Sprouts


How Do I Make Barb and Ed's Thai Noodle Soup?

Here is how you make Barb and Ed's Thai Noodle Soup:

VEGETABLE SOUP -In large pot, add the onion, carrots, celery, garlic, parsley, and lentils and cook them over high heat for 5 - 10 minutes, stirring frequently. Add water, 1 - 2 tablespoons at a time to keep the vegetables from sticking to the pan. Add 2 quarts of water and bring a boil. Lower the heat and simmer, uncovered for 30 minutes. Strain the stock carefully and discard the solids.THAI NOODLE SOUP -In medium pot, add onion, carrot, sugar snap peas and mushrooms and saute for 7 - 8 minutes. Add water, 1 - 2 tablespoons at a time to keep the vegetables from sticking to the pan. Add the garlic, ginger, bok choy, vegetable stock, soy sauce, lime zest and juice, and serrano chile. Bring to boil over high heat. Reduce the heat to medium and simmer for 10 minutes.Add cooked rice noodles and bean sprouts, simmer for 5 minutes.Serve
