In a covered sauce pan, bring black-eyed peas, garlic cloves and 4 cups of water to a boil. Reduce the heat and simmer until tender, about 45 minutes.2. Meanwhile, in an nonreactive soup pot, saute the onions and celery in the oil on medium heat for about 10 minutes.3. Stir in cayenne, allspice, and thyme and cook for 1 to 2 minutes, stirring frequently.4. Add the bell peppers, stir well, cover, and cook for 3 to 4 minutes.5. Stir in corn, tomatoes and water.6. Cover and bring just to a boil; then add the greens, gently simmer until tender, and remove from the heat until the peas are ready.7. When peas are tender, add them, the garlic, and their water to the soup pot.8.
