Here is how you make West African Peanut Soup - Vegan:

Saute onion in olive oil. Add sliced carrots and saute for a few minutes. Add ginger, cayenne, sweet potato, water, tomato juice, salt and pepper. Cook for 15 or 20 minutes until sweet potato is tender. Process in food processor or Vita-Mix with peanut butter.
