Add olive oil to soup pot. Cook onion, leek, garlic, carrots, potato, fresh mushrooms until softened slightly.Add boulion cube (vegetable) to 2 cups boiling water until dissolved well. Once fresh veggies are cooked to your preference, add vegetable stock to the pot. Drain all canned vegetables EXCEPT corn and tomatoes and add all the canned goods (Corm, peas, green beans, garbanzo beans, tomatoes, mushrooms) add to the pot. Add the remaining 1 cup of water, brown rice, salt, pepper and oregano. Heat to boiling stirring occassionally.
