How Do I Make Refrigerator Soup?Here is how you make Refrigerator Soup: Saute sliced onion in olive oil in a soup pot. Add mushrooms and saute 1-2 minutes more. Add water and 3 pinches of salt. (I often add a 1-2 inch piece of kombu - dried sea kelp- with the water.) Cut vegetables in small pieces and add to water. Bring to a boil and boil gently for about an hour or until vegetables are tender. Fresh herbs may be added at the end of the cooking time,(Whatever you are fond of) or dried herbs may be added near the beginning.
