1 cup chopped onion
1 cup chopped carrots
1 28 ounce can of plum tomatoes in juice
1 6 ounce can of tomato paste
1/2 cup ketchup
1/2 cup brown sugar
1 bay leaf
1/2 cup lemon juice
3 pounds (half a large head) white cabbage sliced into thin ribbons

Here is how you make Tangy and Sweet Cabbage Soup:

Heat olive oil and saute the onion until soft. Add 3 cups of water, carrots, tomatoes, paste, ketchup, brown sugar and a bay leaf. Simmer for 10 minutes and then crush the tomatoes with a potato masher or a fork. Simmer for another 10 minutes until carrots are tender. Discard bay leaf.Blend the soup until coarse in a blender or use an immersion blender. Return the soup to the pot and add lemon juice, cabbage and 3 cups of water. Simmer until the cabbage is cooked to your liking. It'll take at least an hour to 2 hours of simmer time. Then thin the consistency of the soup with water.
